Conga Bars – Arbor House of Black Mtn NC  Ingredients: – 1 cup Pecans (Toasted/Chopped) – 1.5 cup Unsweetened shredded coconut – 1.5 cup AP Flour – can substitute Bob’s Red Mill Gluten Free Flour – 1 tsp Baking Powder – 1/2 tsp Salt – 12 TBS Unsalted Butter (Melted & Cooled) – 1.5 cup Light Brown Sugar – 2 Eggs (Slightly Beaten) – 4 tsp Vanilla Extract – 2 oz Bran – 2 oz Oats – 4 oz Dried Fruit – 4 oz Chocolate Chips OPTIONAL (Duke Mansion uses no chocolate chips and calls it a breakfast bar)   Directions: Preheat Oven to 350 degrees Toast Nuts & Coconut Sift dry ingredients together Whisk butter and brown sugar together until combined. Add eggs & vanilla extract and mix well. Fold dry ingredients into egg mixture; do not overmix. Fold in coconut and nuts (add optional chocolate chips here) then turn batter into prepared pan Bake until shiny, cracked, golden brown (aprox. 22-25 minutes). Cool on rack, unpan, wrap in plastic wrap & store in freezer
